Low Carb Italian Crackers

I made up these Low Carb Italian Crackers because somebody was asking about LC cracker recipes on our Facebook page, so I pulled out one of my cookbooks and adapted a recipe to fit what I had in the cupboard. Because hey, my favorite recipes are the ones that I don’t have to go to the store to make!

A little experimentation later, and I ended up with these savory, crunchy, diamond-shaped crackers. They passed the husband test–he thought I bought ’em!–so I decided to share the recipe with you all.

  2. These look very good!! I can’t have grains so is there something that can be used instead of oat bran? would love to try these!!

    1. I’d suggest you just experiment with what you can have. Most of the flavor is not going to come from the oat bran, it’s more adding texture.

Up at the top it says “serves 50” & bottom nutrition fact says serving size 5 crackers which would be 250 crackers…in notes it says “5 crackers based on about 50 total”…so wondering which one is accurate? would it be easier to put serving size up at top with how many it serves to have it all in one place? 🙂

    1. I adjusted the serving size, thanks for pointing that out. The formatting is set by the plugin I use for recipes so I cannot easily alter it.
